- Your favourite cut of pork
- Vegetable Oil
- Sea Salt
- Boiling Water
- Make sure your pork skin is scored – ask your friendly butcher to do this for you!
- Preheat the oven to 220ºC.
- Pour boiling water over the pork to expose score marks.
- Pat dry with a towel.
- Rub pork with oil and salt ensuring the salt makes its way into all the gaps.
- Place in oven for 20-30 mins or until skin is crackled.
- Resume normal cooking temp until pork reaches an internal temperature of 70ºC.
